Ristretto

A taster's term associated with odours of deterioration and oxidation, as when oily foods like nuts go stale.

Scholarly Augsburg physician, traveler to Middle East 1573-78, the first European to write about coffee, and report that it had been drunk for hundreds of years.


A taster's term for the coffee aroma characteristic of hot tyres, not necessarily derogative, and often associated with certain Robustas.


Seventeenth-century physician who first noted (wrougly) that coffee could "cure drunkards".


The terrible disease, Hemileia vastatrix, which completely destroyed some of the world's most productive arabica plantations, particularly in the Far East, in 1860-80. It is not yet conquered and is still a threat to plantations.

This is the strongest and most concentrated espresso drink. It is made with about half the amount of water but the same amount of coffee as a regular espresso. It is pure, intense, and wonderful in taste. Ristretto in Italian means "restricted."
