First, there are a few general rules as some guidance:
Always use
fresh, cold water but never chemically-softened. Slightly hard
water makes the best coffee. Soft water can cause
over-extraction. However, soft water lacks the flavor-enhancing
minerals and sodium that hard water has.
When in doubt,
be generous with the coffee - after brewing, it can always be
diluted, but do remember that it can never be made stronger. So,
always use the correct
grind.
Use water just
off the boil, but do not boil the coffee, unless you are making
Turkish coffee.
Serve and
drink the coffee as soon as possible after brewing, unless you
are making cold coffee drinks.
Never reheat
coffee or keep it hot longer than about 40 minutes (except if
kept in a
vacuum flask).
Never re-use
coffee grounds.
Always use
clean, well-rinsed utensils as coffee is oily and leaves an
invisible film, which can turn rancid. Caution: traces of detergent can
taint the taste of the next brew.
