Can I make a successful Irish coffee without
using sugar?
In a word, no. The
combination of sugar and alcohol in the coffee makes the coffee more
dense, which in turn allows the cream to float over the surface. If
sugar is not used, the cream will mix in with the coffee as soon as
it is added.
For each serving, put 1 teaspoon of sugar
and 3 tablespoons of Irish Whiskey into a warm, tall-stemmed glass
and fill two-thirds full with strong black coffee. Stir briefly,
then pour fresh cream gently over the back of a teaspoon placed
close to the surface, so that the cream does not sink. Serve
immediately, drinking the coffee through the layer of cream. The
cream often works best when used at room temperature.
