Honduras
Honduras' washed Arabicas make up about two per cent of the world's coffees. Like its neighboring countries, Honduras classifies its coffees by altitude, "Standard" being the lowest grown (700-1,000 meters), with "High Grown" next (1,000-1,500 meters), leaving only a small percentage of "Strictly High Grown" at the top (1,500-2,000 meters). The SHGs have a medium body, but good flavor and acidity. The blue-green beans may be any one of half a dozen Arabica varieties.
