The coffees of Mexico, which represent
about five per cent of world production, are not as reliable as
those of other Central American countries, but they are interesting.
Even when they are good they may be thin and slightly sharp, but
their lightness is acceptable and pleasant and rather dry. Mexican
coffees grow between 400 and 1,700 meters high, lowest exported
being the "Prime Washed" starting at 700 meters. The "HIGH Grown" (Altura)
is cultivated between 1,000 and 1,600 meters; at the top in both
altitude and quality are the SHGs. Aromatic and medium-bodied,
Mexican coffees vary a lot from region to region, perhaps the best
being those from the states of Veracruz (Altura Coatepec), Orizaba,
and Oaxaca in the south-west. |
