El Salvador claims about two per cent
of the world crop. Germany and the United States buy most of its
coffee, which is almost all washed Arabica, grown on thousands of
farms. The quality of Salvador coffee, as it is known in the trade,
is determined by altitude: CS ("Central Standard"), grown below
1,000 meters, is mostly sold to the USA, has good acidity and body,
and makes up the majority of the crop; HG ("High Grown"), between
1,000 and 1,500 meters, is very similar to CS in the cup, but the
beans are a bit rounder in appearance; SHG ("Strictly High Grown"),
the best classification, denotes large, blue-green beans which
produce good acidity, and a full-bodied "soft" flavor. The Salvador
SHG beans form the basis for many coffees marketed in Germany. |
