As modern lifestyles become increasingly frantic and our shrinking world evolves into a one big market place, natural products are subjected to unnatural processes. Questions of health and safety often arise. Here is how coffee is made instant and accessible.

When a British chemist invented a process for reducing liquid coffee to a dry concentration of soluble solids in 1906, instant coffee had arrived.

In countries like Great Britain, where tea had long ago replaced coffee as the national drink, there was not even the background of s strong coffee culture to instill the slightest suspicion that instant coffee might involve sacrificing quality for convenience.

Today, the instant habit seems to have become a necessity, for although the coffee market has grown considerably in comparison to its former ratio with tea, nine cups of instant are consumed for every cup of fresh coffee.
